Professional Cooking is an excellent textbook for use in food service/culinary arts and concurrent enrollment.  This would also be a great resource for any foods teacher.  All topics in the Utah Standard Core are extensively covered with the exception of employment skills and basic measuring techniques.  These basic measurment techniques should have been covered in prerequisite courses.  Information is easy to read with numerous pictures and illustrations.  Graphic quality surpasses other previously reviewed texts.  A correlation between the text and state standards is available from the publisher.
